There are two Leith’s chef schools, one in Kensington London, Leith’s School of Food and Wine which belongs to Caroline Waldegrave who set it up with me in 1974. Since she now owns it I can say without egoism that it is the best school in the country. I have never heard anyone, not even students that have failed their course, say they did not enjoy it and learn a lot. www.leiths.com

The other is the Prue Leith Chef's Academy in South Africa, set up in 1997, which consists of a chef school, a party and event catering company and a public restaurant, all manned by apprentice chefs in training. I go there every year for a week to check up on the place, and I have to say I am very proud of it.
